I wondered about the camera. Do you need a special “gyro” camera? Or is this edited somehow?
Gyro stabilised camera.
It could be mechanically gimballed (like e.g. the DJI Osmo and its various versions; they are great for ski videos 
) or stabilised using solid state gyros (like the latest Gopro).
I don’t think it was done in software because software stabilisation needs reference points to be assigned if you want just the background to be stable. I don’t even know if any consumer software does that. They all do “stabilisation” but it is whole-frame and mostly basically crap.

I always wonder about the risk of bird strikes during such ops, but haven’t heard of many cases.
