Is this a destination where you can get a good breakfast on the weekend?
I'd say definitely - there are loads of places to eat in the town.
It's got everything from low-end fish and chips to fairly posh places.
You are only 15 mins in a taxi from Padstow, which is crawling with restaurants. If you want to wiggle your toes in the sand there is a beach cove 3 mins away from the airport called Mawgan Porth. You can probably get a bite their too.
The nice man at Weston, the FBO, will get a cab for you.

There's Perranporth too, although I have no idea what it's like there. No doubt with Cornwall, it won't be far from a beach and somewhere you can buy a lolly
Perranporth is very nice (both airport and town).
But the airport has no instrument approaches, and the taxi into Newquay will cost you something comparable to flying straight into Newquay airport.
Newquay airport is really nice and well organised nowadays, and the GA facility is very straightforward (much better than it used to be when it first opened fully to civilian use a few years ago) but I can't help feeling that one day somebody will shut it down due to the obvious lack of business.
