I have one of these old units and EGNOS doesn’t work on that.
So it seems clear that on old units the WAAS (US) satellite numbers were hard-coded.
But still AFAIK the current GA products (Garmin GNSW/GTN and Avidyne IFD) are only WAAS+EGNOS. Or are these available for other SBAS systems?
All the certified receivers should support the various SBAS providers:
I turn off any of the SBAS providers when I am not in their service volume. There may be old versions of software that don’t support all the SBAS providers.

Does that make any difference?
I don’t have a reference, but IIRC there was a situation where EGNOS reception while inside the north eastern part of the WAAS service volume could cause issues and the recommended action was to turn off EGNOS in the SBAS configuration.

Yes, I can see that if there is overlap there could be issues as the two systems are unlikely to give the exact same corrections.
